Grilled Balsamic and Peach Chicken

Sweet, savory, herby, and made for grilling season. This Herby Balsamic Peach Chicken is one of my favorite ways to take advantage of fresh summer produce while keeping dinner light, flavorful, and family-friendly.

There is something about cooking with fresh peaches in the summer that makes an ordinary dinner feel a little more special. Add a hot cast iron pan, a simple balsamic marinade, fresh herbs, and a drizzle of balsamic glaze, and you have a dinner that tastes like summer on a plate.

The chicken is marinated in a simple mixture of balsamic vinegar, honey, Dijon mustard, garlic, and Italian seasoning before hitting the pan. Then the peaches get grilled until they’re slightly caramelized and have those beautiful grill marks while still holding their shape.

Finish everything with a thick balsamic glaze, fresh basil, and a little crumbled feta, and you’ve got the perfect combination of sweet, savory, tangy, and fresh.

How to Make Herby Balsamic Peach Chicken

1. Marinate the chicken

Add the balsamic vinegar, olive oil, honey, Dijon mustard, garlic, Italian seasoning, salt, pepper, and fresh herbs to a bowl or zip-top bag.

Add the chicken and toss until it is evenly coated. Cover and refrigerate for at least 30 minutes, although 2–4 hours is ideal for the best flavor.

I recommend taking the chicken out of the refrigerator about 15–20 minutes before grilling so it isn’t ice cold when it hits the pan.

2. Grill the chicken

Preheat your grill to medium-high heat.

Remove the chicken from the marinade and grill until it is nicely charred on the outside and cooked through. Cook until the thickest part reaches 165°F for food safety.

The exact cooking time will depend on the size and thickness of your chicken breasts, so a meat thermometer is the easiest way to know when they’re ready.

3. Prepare the peaches

While the chicken is grilling, slice your peaches into wedges.

4. Grill the peaches

Once the chicken is nearly finished, place the peach wedges directly on the pan.

Grill for about 2–3 minutes per side, or until the peaches have visible caramelization and are slightly softened but still hold their shape.

You want them warm and caramelized, not mushy.

5. Assemble

Arrange the grilled chicken on a serving platter and scatter the grilled peaches around and over the top.

Drizzle generously with balsamic glaze, then finish with fresh basil and a sprinkle of crumbled feta.

Serve immediately.

Tips for the Best Grilled Peach Chicken

Choose peaches that are ripe but still firm. Very soft peaches can fall apart on the grill. You want peaches that smell sweet and give slightly when pressed but aren’t overly soft.

Don’t skip the balsamic glaze. The marinade gives the chicken a delicious savory-tangy flavor, but the thick balsamic glaze adds that final hit of sweetness and acidity that brings the whole dish together.

Keep an eye on the peaches. They don’t need long in the pan. A few minutes is enough to get them caramelized while keeping their texture.

Use fresh herbs if you have them. Fresh basil is my favorite finishing herb, but rosemary also works beautifully with the balsamic and peaches.

Let the chicken rest. Once the chicken comes off the pan, let it rest for a few minutes before slicing. This helps keep it juicy.

This chicken is delicious with simple summer sides. Since the grill is already hot, you can keep things easy and grill some vegetables alongside the chicken and peaches.

Ingredients
  

  • ¼ cup balsamic vinegar

  2. Grill the chicken until nicely charred and cooked through at 160 degrees
  3. Cut fresh peaches into wedges
  4. Arrange the grilled peaches around/over the chicken
  5. Grill the peaches for a couple minutes per side until you get those beautiful grill marks but they still hold their shape
  6. Drizzle with a thick balsamic glaze
  7. Serve with fresh basil and maybe a little crumbled feta
