Herby Balsamic Peach Chicken

Sweet, savory, and full of fresh summer flavor, this Herby Balsamic Peach Chicken is an easy weeknight dinner that feels a little fancy. Juicy chicken is marinated in balsamic, honey, Dijon, garlic, and herbs, then cooked in a cast iron skillet with fresh peaches until caramelized. Finished with balsamic glaze, fresh basil, and feta, it's a simple way to make the most of peach season.

Ingredients
  

  • ¼ cup balsamic vinegar
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 tsp garlic minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 1/2 tsp Black pepper
  • 1 lb skinless chicken breast
  • 4 sliced peaches

Method
 

  1. Marinate the chicken using all ingredients but the peaches at least 30 minutes, ideally 2–4 hours before grilling
  2. Grill the chicken until nicely charred and cooked through at 160 degrees
  3. Cut fresh peaches into wedges
  4. Arrange the grilled peaches around/over the chicken
  5. Grill the peaches for a couple minutes per side until you get those beautiful grill marks but they still hold their shape
  6. Drizzle with a thick balsamic glaze
  7. Serve with fresh basil and maybe a little crumbled feta

Notes

Serving Size is 4 people: 4 oz of chicken, half of marinade (half is leftover after it has marinated) and 1 peach per person.
