One Pot Philly Cheesesteak Pasta

Ingredients
  

  • 1 lb lean ground beef, (I use 97/3)
  • 8 oz dry Barilla Protein penne pasta (you can use regular for less protein)
  • 1 tsp olive oil
  • 4 oz mushrooms, diced (this is half a container, but you could do more)
  • 1 medium onion diced
  • 2 bell peppers any color, diced
  • 3 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1 packet Onion Recipe Mix
  • 1 cup plain nonfat greek yogurt
  • 1 cups shredded skim mozzarella cheese

Method
 

  1. Mix the greek yogurt and onion soup mix in a bowl and set aside
  2. Brown the ground beef in a large skillet or pot then move to a separate bowl
  3. Add 1 tsp olive oil mushrooms, onion and bell pepper and cook until they are soft
  4. You can also use extra broth instead of oil
  5. Add the meat back in then pour in the beef broth and Worcestershire sauce.
  6. Bring the broth to a boil then add the 8oz uncooked penne. Cover and let simmer for approx. 15 minutes or until liquid is gone
  7. Pull the pan off the heat and let sit for 2 minutes
  8. Mix in the greek yogurt/onion soup mixture until the pasta is creamy
  9. Sprinkle the shredded cheese on top and cover for a few minutes until melted, then stir
