Ingredients
  

  • For the Salad
  • 3 cups of broccoli or one 12 oz bag
  • 6 slices of bacon crispy and diced
  • ½ cup raisins
  • ½ cup sunflower seeds
  • For the Dressing
  • 1 cup nonfat greek yogurt
  • 1/4 cup light mayonnaise
  • 2 Tbsp apple cider vinegar
  • 3 Tbsp honey
  • 1 tsp dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper

Method
 

  1. Cut the broccoli into small, bite-sized pieces, removing the thick stems as needed. Add to a large bowl.
  2. Add the diced bacon, raisins, and sunflower seeds.
  3. In a separate bowl, whisk together the Greek yogurt, mayo, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
  4. Pour the dressing over the broccoli mixture and toss until everything is evenly coated.
  5. Cover and refrigerate for a few hours before serving. This gives the salad time to get nice and cold and allows the flavors to come together.
