Lightened Tuna Noodle Casserole

My mom taught me to make Tuna Noodle right before going to college and it became my favorite comfort food. This version adds some extra protein and a slightly different flavor.

Ingredients
  

  • 8 oz (when dry) egg noodles
  • 2 cans tuna in water (you could add a third for more protein)
  • 1 10 oz can of fat free cream of mushroom
  • ½ cup of plain Greek yogurt
  • ½ cup of fat free Fairlife milk
  • 1 packet of Vegetable Recipe Mix (like Knorr or Lipton for spinach dip)
  • 1 cup of French fried onions
  • 1 cup of Colby Jack shredded cheese
  • Salt and pepper to desire

Method
 

  1. Pre-heat oven to 350 degrees
  2. Cook the egg noodles then drain when they are done
  3. In a bowl, mix tuna, noodles, cream of mushroom, greek yogurt, milk, seasoning mix, ¼ cup of the french fried onions, ALL of the cheese, salt and pepper
  4. Pour mixture into a casserole dish
  5. Cook for 10 minutes, pull out and sprinkle the remaining fried onions on top
  6. Cook for an additional 10 minutes, or until bubbly, then let cool and serve
