Ingredients
  

  • 4 Red bell peppers, cut in half
  • 1 lb Boneless, skinless chicken breast
  • 1 cup Blended cottage cheese
  • 1/3 cup Buffalo sauce
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 1/2 cup Shredded Colby jack cheese
  • Salt and Pepper to taste

Method
 

  1. Pre-heat oven to 350 degrees
  2. Clean and cut bell peppers in half and lay on a baking sheet
  3. Add all of the ingredients (EXCEPT THE CHEESE) into a bowl and mix
  4. Evenly distribute the mixture into the 8 pieces of bell pepper
  5. Top with the shredded colby jack cheese
  6. Cook at 350 degrees for 25 minutes, then broil for 3 more or until your cheese is a desired level of crispy
  7. Sprinkle green onions or a small amount of ranch dressing if you would prefer
